2 tablespoons milk&lt;br /&gt;-2 cups quick cooking oats&lt;br /&gt;-1/2 cup toasted coconut (300 degrees oven, single layer on cookie sheet. Stir occasionally 10-15 mins.)&lt;br /&gt;-1 cup raisins &lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;b&gt;Preparation:&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;1.) Preheat the oven to 350 degrees. Lightly oil baking sheet.&lt;br /&gt;2.) In a large bowl, cream together the butter and brown sugar, them beat in the eggs one at a time, scraping down the sides of the bowl as needed.&lt;br /&gt;3.) In another bowl sift three times the flour, salt, baking soda, and spices. Add half the flour mixture to the butter mixture, then half the milk, whisking to incorporate. Repeat with the rest of the flour and milk. Gently fold in the oats.&lt;br /&gt;4.) Drop the dough by rounded tablespoons onto the prepared cookie sheet, about 2 inches apart. Bake until the cookies are golden brown, but the centers are still soft, about 15 minutes. Coat salmon and zucchini (and/or summer squash) on both sides with cooking spray, then sprinkle with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill, turning once, until the salmon is just cooked through and the squash is soft and browned, about 3 minutes per side. &lt;/div&gt;&lt;div class="section"&gt;                         &lt;strong&gt;4.&lt;/strong&gt; Transfer the squash to a clean cutting board. When cool enough to handle, slice into 1/2-inch pieces. Toss in a bowl with half of the reserved sauce. Divide the squash among 4 plates along with a piece of salmon topped with some of the remaining sauce. Garnish with parsley, if desired.&amp;nbsp;&lt;/div&gt;&lt;div class="section"&gt;&amp;nbsp;&lt;/div&gt;&lt;div class="section"&gt;*To skin a salmon fillet, place on a clean cutting board, skin side down. Starting at the tail end, slip the blade of a long, sharp knife between the fish flesh and the skin, holding the skin down firmly with your other hand.
